Chef Cliff Huck
When head chef Cliff Huck began to envision the menu for Cornerstone Grill, he knew a handful of values would guide the fine ingredients in his dishes: fresh, organic, handmade, sustainable, quality, local, and, of course, Okanagan.
“At Cornerstone, we’ve put so much focus on the food,” says Huck, whose talents brought him to kitchens—such as Spirit Ridge Vineyard Resort & Spa, Grande Rockies Resort, and others across BC and Alberta—before he agreed to head the Best Western Plus Kelowna Hotel & Suites’ new restaurant. “We’ve got such an abundance of fresh, local ingredients here, and we were keen to work with producers in the area. We also wanted to push the boundaries a bit with flavour.”
The result? An African-inspired lamb burger that fuses curry, cucumber yogurt, feta and harissa spice. Lobster pot pie, peach pie featuring fruits from nearby orchards, roasted beet salad on local greens, short rib grilled cheese, and for the kiddos, wholesome fresh pizzas and noodle bowls.
By sourcing meat from an Armstrong farm and as much produce as he can from valley producers as well as growing his own herbs in the summer, Huck and his team ensures guests eat the kind of feel good/feel full meals he’d serve his own family.
